In Anglo-Saxon countries, parsnip is widely used in cooking to make delicious soups, stews and salads. In Italy, however, this ancient tuber is almost completely unknown to most people today, even though it was widespread until the Middle Ages.

Parsnip belongs to the sativa family Apiaceae and it closely resembles the root, but is of a whitish colour, and must be eaten cooked. The size of this vegetable varies from an ordinary carrot to three times its weight. As for the taste, it is quite fresh and slightly sweet.

Rich in fiber, vitamin C, magnesium and potassium, parsnips are a highly nutritious and versatile vegetable that can be eaten in a variety of ways: baked, fried, steamed, boiled, in salads or soups.

Parsnip and ginger soup recipe

We offer a tasty and nutritious recipe that is suitable for cold winter evenings. Parsnip and ginger soup has a fresh and spicy flavor on the palate and is a creative alternative to classic vegetable or bean soups.


-2 tablespoons extra virgin olive oil
-1 large onion, chopped
– 750 g of parsley
– 1 clove of chopped garlic
-2 cm peeled and chopped ginger root
-1.2 liters of vegetable juice
-3 tablespoons of sour cream


Heat the oil in a large pan, add the onion and fry for about 3-4 minutes or until golden. Meanwhile, wash the parsnip roots, cut off the ends and cut into equal pieces.

Add the chopped parsnips to the pan along with the garlic and ginger and stir-fry for 2 minutes. Pour the vegetable stock and bring to a boil, cook for 20-25 minutes until the parsnip is softer. Use a hand blender to blend the soup until smooth and velvety. Add sour cream at the end.

Accompany the dish by sprinkling parsley or sweet paprika on plates or soup bowls. Alternatively, you can enrich the dish with some parsnip chips.
